County Commission says “No” to Tipsy’s

The Gadsden County Commission has voted against allowing Tipsy’s to operate as a full-time bar and lounge in Havana, bringing an end, for now, to a proposal that drew significant public attention.

In a 4–1 decision, commissioners upheld the recommendation of the planning and zoning committee as well as staff recommendations denying the requested special exception for the property located at 6766 Fla-Ga Highway. Commissioner Brenda Holt cast the lone vote in favor of the request, while the remaining board members sided with staff and committee concerns.

The issue prompted a notable turnout at the commission meeting, with community members speaking both in support of and in opposition to the proposed change. Supporters argued the business could bring new energy to the area, and that the owners should be given a chance. Opponents raised concerns about noise, traffic, and the potential negative impact on the surrounding community, including a church and daycare.

Ultimately, the commission’s decision reflects those concerns, keeping the property from transitioning into a full-time bar or lounge under the current request.

  • Bryant Elected to Havana Town Council; Swearing-In Set for April 30

Bryant Elected to Havana Town Council; Swearing-In Set for April 30

Havana voters have selected a new representative for Town Council Group 4 following the April 28 municipal election.

John N. Bryant was elected with 78.85% of the vote, defeating Robert Mosby, who received 21.15%. The seat was previously held by Councilman Landon Seymour.

Bryant brings decades of experience in public service to the role, including more than 40 years in policy, management, legislative, and budget work with the State of Florida. He is also a graduate of the University of West Florida and has pursued graduate studies in public health.

In pre-election responses, Bryant said his decision to run was rooted in a desire to serve the community in a more formal capacity, citing his involvement as a local volunteer and his connection to Havana.

Key Issues Identified During the Campaign

During the campaign, Bryant pointed to several ongoing challenges facing Havana, including:

    • Aging water and sewer infrastructure
    • Support for fire and police services
    • Access to healthcare and community services
    • The need to recruit and retain a qualified town manager

He also emphasized the importance of maintaining relationships with local businesses and seeking additional funding sources such as grants to support town operations.

Mosby, a military veteran who moved to Havana in 2017, focused on community involvement and expressed interest in playing a role in shaping the town’s direction.

    Swearing-In and Upcoming Decisions

According to a notice from the Town of Havana, a Special Council Meeting is scheduled for April 30 at 6:00 PM at Town Hall (711 N. Main Street).

    The meeting agenda includes:

    • Swearing in council members for seats 4, 6, and 7
    • Appointment of a council member to fill Seat 5
    • Selection of the Mayor and Mayor Pro Tem for the coming year

All meetings are open to the public.

    What Comes Next

With the Group 4 race decided, attention now turns to the vacant Seat 5 position. While no official action has been taken, Robert Mosby may be considered for appointment, with a decision expected during the upcoming council meeting.

Bryant is expected to be sworn in at that meeting and begin his term immediately following.

Havana Hub extends congratulations to John N. Bryant on his election and looks forward to covering the work of the Town Council in the months ahead.

  • Havana Sunday Spotlight – Ida-Belle’s Southern Kitchen

Havana Sunday Spotlight – Ida-Belle’s Southern Kitchen

This week’s Sunday Spotlight shines on Ida-Belle’s Southern Kitchen… a Havana-grown business rooted in tradition, hospitality, and a whole lot of heart.

Owner and Havana native knows this community well… because it’s home. Having grown up right here, it was only natural to build something meaningful in the same place that helped shape her.

Ida-Belle’s Southern Kitchen officially launched in 2021, following the closing of her brick-and-mortar restaurant. But instead of stepping away, she leaned in… falling even deeper in love with the hospitality industry and finding new ways to serve others through food and connection.

And if there’s one thing she wants people to know… there are no shortcuts. Everything is done the way her family did it… with care, intention, and pride in every detail.

While catering remains her most popular service, there’s a growing demand for her private chef experiences… and that’s where she really feels her work shines. Cooking for smaller groups allows her to focus not just on the cuisine, but on creating meaningful, intentional moments around the table. That said… she still loves being part of big celebrations like weddings and corporate events.

When asked about her best-selling offering, it comes back to that same idea… the private chef experience. It’s personal, it’s elevated, and it’s where her passion for both food and hospitality truly comes together.

Even after transitioning away from a physical restaurant, the support from Havana hasn’t gone anywhere. She still feels it… and carries that gratitude with her every day. It’s also why she makes a point to support other local businesses whenever she can… because she knows just how much that community support matters.

Behind the scenes, there’s a lot that people don’t always see. She pours everything she has into her work and her clients… so while she may come across as energetic and outgoing, the days can be long and exhausting. Over time, she’s learned how important it is to find balance… to step away when needed and make space for self-care, even in small ways.

When she does get a break, you’ll likely find her spending time with others in the hospitality world… swapping stories, decompressing, and building connections with people who truly understand the grind. It’s part networking, part therapy, and a whole lot of mutual support… a reminder that even in a group of self-described “misfits,” there’s a strong sense of community.

Ida-Belle’s Southern Kitchen is more than just great food… it’s about connection, tradition, and showing up for people in a meaningful way… one meal at a time.

  • Havana Sunday Spotlight – Doering’s Doughs

Havana Sunday Spotlight – Doering’s Doughs

Doering’s Doughs has become a familiar (and delicious) part of the Havana community, known for its fresh-baked breads, creative treats, and the kind of quality you can taste in every bite. What started as a simple idea has grown into a beloved small business, built on early mornings, dedication, and a whole lot of flour.

Four years ago, Missy Doering moved to Havana because she loved the idea of raising her kids in a small, close-knit community. Not long after, Doering’s Doughs was born, originally inspired by a simple goal: to make her children delicious treats made with good, honest ingredients. That same care still goes into everything she bakes today.

This past week marked a special milestone as Doering’s Doughs celebrated its three-year anniversary. In that time, it has grown from a small venture into a local favorite, with best sellers including challah breads, sourdough loaves, muffins, and cookies. Missy’s personal favorite is a sharp cheddar sourdough loaf, toasted with butter. It is simple and hard to beat.

At the heart of it all is a genuine love for people. “I put 100% love into everything I make,” Missy shares, “but my favorite part has truly been meeting the community.” She is also passionate about supporting other local businesses and often brings out-of-town guests to experience the charm of downtown Havana. “There’s so much kindness here. You can really feel it.”

If you have not had a chance to try Doering’s Doughs yet, or just need another excuse, you can find them at the market this Saturday. It is the perfect opportunity to grab your favorites, try something new, and support a local business that continues to grow and dream.

The best way to reach Doering’s Doughs is by text, email, or Facebook.

Something that might surprise people about Missy is that she is also a photographer. When she is not baking, she loves spending time gardening or being with her husband, kids, and dog, soaking up the same sense of home and community that inspired her business in the first place. Simple, heartfelt, and rooted right here in Havana. That is Doering’s Doughs.

  • Havana Sunday Spotlight – Juarez Roofing

Havana Sunday Spotlight – Juarez Roofing

This week’s Sunday Spotlight shines on Juarez Roofing LLC, a locally owned roofing company based right here in Havana.

Owned by Monica Juarez, the company will celebrate 7 years in business this May. Roofing runs in the family… Monica says her husband Ricardo has always loved construction, and the two first launched M&R Renovations back in 2014, which is still going strong today. Construction also runs deep in Monica’s family… her father retired from AJAX Building Corp in the mid-2000s, and her stepfather was one of the best known residential brick masons in Tallahassee.

Juarez Roofing has built its reputation the old-fashioned way… word of mouth. Monica says they don’t really advertise, and most of their work comes from happy customers recommending them to friends and neighbors.

As a woman-owned and minority-owned business, Monica takes pride in running a small company focused on craftsmanship and attention to detail. In fact, she says they’ve never had to return to a completed roof due to workmanship issues… something that speaks to the quality of their work.

Their most popular installs are Owens Corning shingles, though Monica admits she especially enjoys projects involving mechanical standing seam metal roofs… a product she says is both durable and beautiful.

Monica and her family moved to the area about six years ago to live near Lake Tallavana, drawn by the peaceful setting and the small-town feel that makes this community special.

When she’s not on the job, Monica enjoys visiting the monthly Havana Market, spending time outdoors, photographing sunsets, crafting, and hanging out with her dogs.

She also enjoys supporting other local favorites like Flower and Photography by Cindy Aho and Doering’s Doughs… especially the sourdough.

Monica says everything they’ve built has come through dedication and sacrifice… starting with very little and working hard to grow their businesses and support their family. She’s also proud of a big family milestone coming up… their daughter will graduate from the University of Alabama this spring.

  • Havana, Florida… History, Community, and a Small Town Worth Exploring

Havana, Florida… History, Community, and a Small Town Worth Exploring

Located just north of Tallahassee is Havana, Florida… this small town in Gadsden County has built a reputation as one of the most unique communities in North Florida. Known for its historic downtown, antique shops, art galleries, and local events, Havana continues to attract visitors looking for a slower pace and a little character.

While it may be small, Havana has a long and interesting history…and a community that continues to shape its future.

    Havana’s Roots in Tobacco Farming

Like much of Gadsden County, Havana’s early growth was closely tied to the shade tobacco industry. In the late 1800s and early 1900s, tobacco farms covered much of the surrounding area, producing wrapper tobacco used in premium cigars.

During those years, Havana became an important center for farming, processing, and trade. Warehouses, packing houses, and local businesses supported the agricultural economy, helping the town grow into a busy small community.

Even today, parts of that history remain visible around town…from historic buildings to the layout of the original downtown streets.

    A Downtown Full of Character

As the tobacco industry declined later in the twentieth century, Havana gradually reinvented itself.

The historic buildings that once served agricultural businesses found new life as antique shops, galleries, cafés, and boutiques. Over time, the town developed a reputation as an antique and arts destination for visitors coming from nearby cities like Tallahassee as well as South Georgia, Alabama, and beyond.

Today, walking through downtown Havana means finding something different in nearly every storefront…antiques, artwork, vintage décor, handmade goods, and locally owned shops that give the town its personality.

    Community Events and Local Life

Havana also keeps its small-town spirit alive through regular community events.

Seasonal festivals, monthly markets, and local gatherings bring residents and visitors together throughout the year. These events help support local businesses while keeping the town active and welcoming.

It’s part of what makes Havana stand out…people still gather, talk, and support the businesses that make the community unique.

    Looking Ahead for Havana

Like many small towns across North Florida, Havana continues to evolve while holding onto the qualities that make it special.

Its proximity to Tallahassee makes it an easy destination for day trips, while its historic charm continues to attract artists, entrepreneurs, and visitors looking for something a little different.

With a strong sense of community and a growing interest in small-town destinations, Havana remains one of the hidden gems of Gadsden County.

    Happy Easter from Havana Hub

As spring arrives and gardens across town begin to bloom, we’d also like to wish all Havana Hub members and readers a Happy Easter.

Thank you for supporting local events, businesses, and the stories that make Havana such a special place to live and visit. We’re glad you’re part of the community…and we look forward to sharing more from around town in the weeks ahead.
